Greek Salad

Ingredients
  • 1 soft lettuce, e.g. butter, round, curly, leaves separated
  • 1 English cucumber, sliced
  • 1 red bell pepper, cored, seeded and chopped
  • 1 small red onion, thinly sliced
  • 1 1/3 cups cherry tomatoes, quartered
  • 1 cup black olives, pitted
  • 1 cup feta cheese, cubed
  • 1/3 cup extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp dried oregano
  • Kosher salt
  • Freshly ground black pepper
Instructions
  1. Arrange lettuce leaves in serving bowls.
  2. Top with cucumber, red pepper, red onion, cherry tomatoes, olives and feta cubes.
  3. Whisk together olive oil, vinegar and oregano with some salt and pepper to taste in a small mixing bowl.
  4. Spoon over the salad before serving.
