Classic Italian Sandwich

Ingredients
  • 8 capocollo slices
  • 8 salami slices
  • 8 prosciutto slices
  • 8 mortadella slices
  • 8 slices provolone
  • 4 submarine rolls, split
  • 1 romaine lettuce, shredded
  • 2 vine tomatoes, cored and thinly sliced
  • Pepperoncini, in vinegar, optional
  • 4 tbsp extra-virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Kosher salt
  • Freshly ground black pepper
Instructions
  1. Stack layers of the meats and cheese into the submarine rolls.
  2. Top with shredded lettuce, tomato slices and pepperoncini, if using.
  3. Whisk together olive oil, vinegar, oregano and some salt and pepper to taste in a small mixing bowl.
  4. Spoon oil and vinegar dressing over the lettuce and tomatoes in the sandwiches.
  5. Cut sandwiches in half before serving.
