Ingredients
- 8 capocollo slices
- 8 salami slices
- 8 prosciutto slices
- 8 mortadella slices
- 8 slices provolone
- 4 submarine rolls, split
- 1 romaine lettuce, shredded
- 2 vine tomatoes, cored and thinly sliced
- Pepperoncini, in vinegar, optional
- 4 tbsp extra-virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Kosher salt
- Freshly ground black pepper
Instructions
- Stack layers of the meats and cheese into the submarine rolls.
- Top with shredded lettuce, tomato slices and pepperoncini, if using.
- Whisk together olive oil, vinegar, oregano and some salt and pepper to taste in a small mixing bowl.
- Spoon oil and vinegar dressing over the lettuce and tomatoes in the sandwiches.
- Cut sandwiches in half before serving.
